Thai Yellow Curry

 

Thai yellow curry features a fragrant yellow curry paste simmered in coconut milk along with vegetables and meat. The savory tasting curry is very filling and perfect paired with rice or flat bread.

For this recipe we have used, Aroy-D Yellow Curry Paste, provided to us by one of our partners, KDM. Aroy-D Yellow Curry Paste is an authentic Thai curry paste. It’s made up of a blend of spices and aromatics like galangal, garlic, lemongrass, turmeric and other spices.

Serves: 2-3

 

Ingredients:

  • 300g of boneless chicken cut to 1–2-inch strips
  • 1 cup coconut milk
  • ½ tbsp olive oil
  • 2 ½ tbsp Aroy-D Yellow Curry Paste
  • 1 tsp ginger garlic paste
  • 1 cup peeled potatoes (cut into small cubes)
  • ½ cup carrot (cut into small cubes)
  • 2 chopped red chilies
  • 20 chopped large basil leaves
  • ¼ cup water
  • 1 tbsp lime juice
  • ½ tbsp fish sauce
  • 2 tsp sugar
  • 1/8 tsp lime zest
  • ¼ tsp salt

 

Instructions:

  1. Into a large pot, add in ½ cup coconut milk (keep the rest aside for now), along with ½ tbsp olive oil, 2 ½ tbsp Aroy-D Yellow Curry Paste, and 1 tsp ginger garlic paste. Then on medium-high heat, stir everything together for 2-3 minutes or until everything is well combined with the coconut milk. Now it will look thick and a dusty orangish-yellow color.
  2. Then add in the 300g of boneless chicken cut to 1–2-inch strips and cook for around 4-5 minutes or until the chicken turns white in colour. Stir occasionally while cooking. Now add in 1 cup peeled potatoes (cut into small cubes), ½ cup carrot (cut into small cubes), 20 chopped large basil leaves, and 2 chopped red chilies. Mix everything together.
  3. Then add in the ½ cup coconut milk you set aside and ¼ cup water. Stir in everything together. Cover the pot with a lid and let it cook for 15 minutes, stirring occasionally.
  4. Lastly, add in 1 tbsp lime juice, ½ tbsp fish sauce, 2 tsp sugar, 1/8 tsp lime zest, and ¼ tsp salt. Mix everything together on medium-high heat for another 1 minute. Now the Thai yellow curry is ready. Serve it with a bowl of rice or flat bread. Enjoy!
