Salad with Yogurt Dressing

 

Who doesn’t love a good, fresh salad? For this salad recipe, we have used both fruits and vegetables to give it a burst of flavour in every bite, along with a yummy, healthy yogurt dressing to give it a refreshing creaminess.

For our yogurt dressing, we have used Emmi Swiss Premium Yogurt (Plain), provided to us by one of our partners, United Foods Suppliers (UFS). Emmi Swiss Premium Yogurt is produced by cows that graze on grass and herbs of Swiss meadows, giving it a high-quality flavour. It also has live lactic cultures and is low in fat with no added sugar. This yogurt is great for cooking, baking and for making salad dressings too.

Serving size: 2-3

 

Ingredients:

For the salad

  • ¼ cup thinly sliced onions
  • ¼ cup thinly sliced cabbage
  • ¼ cup thinly sliced green apples
  • 1/3 cup thinly sliced carrots (cut into strips)
  • ½ cup thinly sliced lettuce (cut into strips)
  • 1 slice of canned pineapple (chopped)

 

For the yoghurt dressing

  • 1/3 cup Emmi Swiss Premium Yogurt (Plain)
  • 1 tsp honey
  • 1 tsp lemon juice
  • 1/3 tsp ground black pepper
  • ¼ tsp salt

 

Instructions:

  1. To start off, add ¼ cup thinly sliced onions, ¼ cup thinly sliced cabbage, ¼ cup thinly sliced green apples, 1/3 cup thinly sliced carrots, ½ cup thinly sliced lettuce, and 1 chopped slice of canned pineapple to a large bowl. Using a pair of tongs, toss everything together until mixed and set aside.
  2. Then, to a small bowl, add 1/3 cup Emmi Swiss Premium Yogurt (Plain), 1 tsp honey, 1 tsp lemon juice, 1/3 tsp ground black pepper, and ¼ tsp salt. Mix everything well together using a spoon until combined.
  3. Pour the yogurt dressing over the cut-up fruits and vegetables. Then, using a pair of tongs, toss everything together to mix. The salad will look creamy and white from the dressing. Enjoy!
